A light and nourishing soup that's perfect for a comforting meal. Packed with natural sweetness from corn and carrots, and enriched with the subtle herbal notes of goji berries and red dates
Ingredients
1 ear of corn, chopped into chunks
1 carrot, peeled and sliced
¼ white radish, peeled and sliced
10 goji berries
4 red dates (seed removed)
Salt, to taste
1.5 litres of water
Instructions
Prepare the ingredients: Peel the carrot and radish. Cut the corn into smaller sections.
In a pot, bring the water to a boil. Add goji berries and red dates.
Add corn, carrot, and radish to the pot.
Simmer over medium heat for 30 minutes, until vegetables are tender and flavors have infused.
