Radish & Sweet Corn Soup
A light and nourishing soup that's perfect for a comforting meal. Packed with natural sweetness from corn and carrots, and enriched with the subtle herbal notes of goji berries and red dates

Ingredients

  • 1 ear of corn, chopped into chunks
  • 1 carrot, peeled and sliced
  • ¼ white radish, peeled and sliced
  • 10 goji berries
  • 4 red dates (seed removed)
  • Salt, to taste
  • 1.5 litres of water
  • Instructions

  • Prepare the ingredients: Peel the carrot and radish. Cut the corn into smaller sections.
  • In a pot, bring the water to a boil. Add goji berries and red dates.
  • Add corn, carrot, and radish to the pot.
  • Simmer over medium heat for 30 minutes, until vegetables are tender and flavors have infused.
  • Season with salt to taste.
  • Serve warm.
