A quick and protein-packed dish that’s perfect for breakfast or a light meal. Made with crumbled tofu, egg, and turmeric for a golden glow — simple, nourishing, and endlessly versatile.
Ingredients:
1 egg
100–150g tofu (soft or firm), crumbled
1/4 tsp turmeric powder
1 tsp tamari
1/2 tsp soybean oil (or sesame oil, optional)
Pinch of pepper (white or black)
Optional add-ins:
A few spinach leaves, shredded carrot, or a sprinkle of black sesame
Instructions:
Crack the egg into a bowl. Add turmeric and tamari/light soy sauce. Beat lightly.
Heat soybean oil in a non-stick pan over medium heat.
Add crumbled tofu and stir gently to warm through.
Pour in the egg mixture and scramble everything together.
Cook for 2–3 minutes until egg is set and tofu is golden.
Season with pepper and serve warm. Enjoy with toast, greens, or brown rice.
