Stir Fried Spaghetti with Mushroom & Spinach
A quick and tasty stir-fried noodle dish with mushrooms and fresh greens, tossed in a light savory sauce.
Ingredients
200g noodles (linguine or wheat noodles)
6–8 button mushrooms, sliced
1 small bunch leafy greens (e.g. spinach or chye sim)
1 tbsp light soy sauce
1 tbsp vegetarian oyster sauce (or mushroom sauce)
1 tbsp cooking oil
Salt & pepper, to taste
Instructions
Boil noodles in a pot of water until al dente. Drain and set aside.
Heat oil in a wok or large pan.
Add sliced mushrooms and stir-fry until golden brown.
Toss in leafy greens and stir-fry briefly until just wilted.
Add cooked noodles to the wok, followed by soy sauce and vegetarian oyster sauce.
Mix well until noodles, mushrooms, and greens are evenly coated with sauce.
Plate and enjoy warm.
