Stir Fried Spaghetti with Mushroom & Spinach
A quick and tasty stir-fried noodle dish with mushrooms and fresh greens, tossed in a light savory sauce.

Ingredients

  • 200g noodles (linguine or wheat noodles)
  • 6–8 button mushrooms, sliced
  • 1 small bunch leafy greens (e.g. spinach or chye sim)
  • 1 tbsp light soy sauce
  • 1 tbsp vegetarian oyster sauce (or mushroom sauce)
  • 1 tbsp cooking oil
  • Salt & pepper, to taste
  • Instructions

  • Boil noodles in a pot of water until al dente. Drain and set aside.
  • Heat oil in a wok or large pan.
  • Add sliced mushrooms and stir-fry until golden brown.
  • Toss in leafy greens and stir-fry briefly until just wilted.
  • Add cooked noodles to the wok, followed by soy sauce and vegetarian oyster sauce.
  • Mix well until noodles, mushrooms, and greens are evenly coated with sauce.
  • Plate and enjoy warm.
